I’ve made this ground chicken chili recipe twice since I originally posted, and it’s only been three weeks. I know it’s hard to find healthy ground chicken recipes that aren’t boring, but trust me when I say that this recipe does NOT disappoint. You are going to LOVE this healthy chicken chili (and the secret ingredient).
Keep in mind that while this is a clean-eating stovetop chili recipe, it is not Whole30 or Paleo compliant.

The Secret Ingredient
There is a secret ingredient in this clean eating chicken chili recipe, and it’s an odd one.
I used applesauce — I know, right?
While tasting the ground chicken chili, I thought it needed a little sweetness. And being that I was preparing a healthy chicken chili recipe, I didn’t want to use molasses (like in the Super Lean Chili recipe) or sugar.
I knew I had to get creative, and that’s when I saw the applesauce sitting in my fridge, and it worked really well!
How to Make This Healthy Chicken Chili Recipe
Cook Ground Chicken
Heat a large pot over medium heat and add your olive oil.
Once olive oil is heated, add the ground chicken and scramble fry it until it’s cooked through (about 7 or 8 minutes).
Add Vegetables
Add the chopped onion and chopped red bell pepper and cook for 3 minutes, until fragrant and tender crisp.
Add chicken broth, black beans, frozen corn, fire roasted diced tomatoes, tomato paste, applesauce, ground chili powder, cumin, oregano, thyme, garlic, and cayenne.
Bring the entire pot to a boil.
Simmer Stovetop Chili Recipe
Once boiling, turn down the heat, cover the pot, and simmer for 50 minutes. Check on your healthy chicken chili after about 30 minutes and give the ingredients a good stir.
Just look at that hearty, chunky, chili glory.
TBK’s Pro Tip: I use a ceramicpot (the one I have is a discontinued KitchenAid, but this Lodge ceramic pot looks good) when I cook up this chili. It makes for an easy cleanup!

Ingredients
- 1 tbsp olive oil
- 1 lb ground chicken
- 1 onion chopped
- 1 red bell pepper diced
- 1 cup chicken broth
- 1 14oz can black beans
- 1/2 cup frozen corn

Instructions
