One of the most important parts of treating fibromyalgia is ensuring a healthy fibro diet.To help with finding good recipesfor fibromyalgia, I am listing my monthly fibromyalgia meals. Please know that by fibro diet, I mean eating the foods that help relieve fibro symptoms and avoiding the foods that irritate the fibro body. One of the first steps of getting on track is by getting the FREE food guide and taping it to your pantry or cabinet door. This will serve as a constant reminder and quick reference guide for the foods to improve inflammation, body aches, energy, and digestion.

Please know that I do not stick to a 100% fibro diet. I’m a mom to five kids and life just happens. If you cannot stick to a good fibro meal, it’s okay – just try again with the next meal.

Ham, black eye peas with rice, steamed asparagus, honey cornbread, and Sara Lee apple pie with (dairy free) ice cream

Yes, I know this is the complete opposite of an appropriate fibromyalgia meal. However, it was New Year’s Day and this meal is a traditional one for me to cook.

January 2

Zestypaprika chicken thighs with lemony, brussel sprouts and potatoes bake

Rating: 4 out of 5 stars

Comments: This was a tasty dish and even my kids ate it! Next time I’d double the recipe to have enough for seconds.

Make it fibro-friendly: We substituted the red potatoes for sweet potatoes and it was just as amazing!

Mexican chicken stir-fry

Rating: 4 out of 5 stars

Comments: My kids were so-so about this dish. Initially, I let them dress it up with a bit of cheese and sour cream and that got them to eat it.

Make it fibro-friendly: Substitute the bell peppers for onions.

Comments: This is my own recipe for spaghetti which is why I give it five stars. My spaghetti is easy: a jar of Prego traditional or marinara sauce doctored up with cooked ground beef (or turkey), onions, garlic, salt, pepper, oregano, and parsley flakes.

Make it fibro-friendly: Use spaghetti squash or shredded zucchini instead of pasta noodles.

Meatball sandwiches with sweet potato fries

Rating: 5 out of 5 stars

Comments: My kids destroyed this dish and asked for seconds!

Make it fibro-friendly: Eat the meatballs without the bun or use a gluten-free wrap.

January 6

My oven broke while baking the meatballs and sweet potatoes, so we had sandwiches for dinner.

January 7

My oven was still broken, so we ordered pizza for dinner.

January 8

Coconut pancakes with scrambled eggs

Rating: 1 out of 5 stars

Comments: While this is a fibro-friendly recipe, it was too sweet for my kids and me, but my husband loved it. He said it tasted like a german chocolate cake. I guess that would be a win if you like something that sweet!

This recipe was taken from the back of my Carrington Farms coconut flour bag (try this one from Boxed– use this link for $15 off your first Boxed order).

Ingredients

  • 4 eggs, beaten
  • 1 cup cream (coconut cream for non-dairy substitute)
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup Carrington Farms organic coconut flour
  • 2 tablespoons coconut sugar
  • 1 1/2 teaspoon sea salt
  • Carrington Farms Unrefined coconut oil, ghee or butter for cooking

Instructions

  1. Mix eggs, cream, vanilla together
  2. In a separate bowl, combine coconut flour, coconut sugar, baking soda and sea salt. Slowly fold wet mixture into dry mix.
  3. Heat griddle or frying pan to medium heat. Add Carrington Farms coconut oil, ghee, or butter.
  4. Pour 1/4 cup of batter into pan. Cook for two minutes on each side or until top starts to bubble around edges. The pancakes should be slightly brown and dry on both sides.

Comments: Sometimes you just have to go with the basics. I know my kids don’t like sweet potatoes, but including a veggie they do like balances it out.

Toasted chicken salad sandwiches with mixed fruit

Rating: 4 out of 5 stars

Comments: I prefer a chicken salad with a bit of crunch to it, and the apples gives this chicken salad a good crunch! The only thing I would change is the use of almonds. Pecans are preferred for me because it reminds me of my grandmother’s delicious salads.

Make it fibro-friendly: Put the chicken salad on a bed of lettuce or put in a gluten free wrap.

Taco salad

Rating: 5 out of 5 stars

Comments: All my homemade recipes get five stars 🙂 My family LOVES taco salad! I’ve had to limit them to twicea month because I would grow tired of them quick. My salads are simple: ground beef with taco seasoning, romaine lettuce, shredded colby jack cheese, green onions, and sour cream. All of that sweetness on a bed of crushed Tositos. Yummy!

Cauliflower Fried Rice

Rating: 4 out of 5 stars

Comments: This is a great fibro-friendly meal! I added broccoli, celery, and bean sprouts to mine. It was perfect! Chopping the cauliflower by hand wasn’t an option for me as my fingers get stiff, but using my food processor made it super simple (I use this inexpensive one).

French toast, fried bacon, and fried eggs

Rating: 2 out of 5 stars

Comments: This received a low rating because of how unhealthy it is, but on the delish meter? Off the charts!

January 14

We ordered pizza for our kids’ sleep overs.

Chicken nuggets, tater tots, and raw carrots

Comments: Sundays are especially hard to get dinner on the table. The weekends are usually easier meals such as frozen chicken nuggets or pizza.

Comments: This is another meal that my kids ate every single morsel! The mac-and-cheese didn’t hurt my stomach as much as I thought it would, but it was still something I will avoid in the future.

Hot dogs smothered in chili and onions with a side of tater tots and fruit

Rating: 5 out of 5 stars

Comments: We eat all beef hot dogs, and I omitted the bun and tots with my serving.

January 18

Southern staple kinda night: Sandwiches and chips!

Comments: My kids get bored with sandwiches. I’ll admit, I do, too. To make it more fun for them, I make a buffet style of sandwich fixin’s. The options make my kids feel as though they are in control of what they are eating, and results in less arguing about having sandwiches – again – for dinner.

One skillet chicken thighs with butternut squash

Rating: 3 out of 5 stars

Comments: This was simple to make especially with the requirement of one dish. When I make it again, I’ll use no salt and chicken breasts instead of thighs.

Rotisserie chicken with raw carrots, steamed broccoli, and fresh pineapple

Rating: 5 out of 5 stars

Comments: I LOVE rotisserie chicken!! Seriously, I could eat an entire bird on my own. To make this an easy meal, I grab one of the rotisserie chickens from the local grocer’s deli and pair it with easy to make sides. Here lately I’ve had to get two birds to feed our entire family.

Chicken nuggets with quick and easy mac-and-cheese

Rating: Again, 5 out of 5 stars for my recipe.

Comments: Here’s an easy way to make mac-and-cheese (I cook a box of elbow noodles and keep them in a sealed container in the fridge) and I prefer to heat it up on the stove, but microwave is okay, too!

Rating: 5 out of 5 stars

Comments: My salads are simple: ground beef with taco seasoning, romaine lettuce, shredded colby jack cheese, green onions, and sour cream. All of that sweetness on a bed of crushed Tositos.

Hot dogs withchips, baked beans, and tropical fruit salad

Rating: 3out of 5 stars

Comments: Even though I usually give my recipes five stars, I gave this one three because of the baked beans. Baked beans do not mix well with a sensitive stomach, and usually end up with bloating and gas. No good for the fibro body.

All meat veggie chili – Paleo chili recipe

Rating: 5 out of 5 stars

Comments: This was an amazing chili recipe! It’s all meat and no beans just the way my husband likes it. I loved the addition of zucchinis and carrots. Aside from needing more seasonings, there is nothing I’d alter with this recipe.

Taco Lasagna

Rating: 3 out of 5 stars

Comments: This was an okay recipe. My kids loved it because it was just like tacos, but I wasn’t liking it as much. Well, not afterwards anyways. It tasted good enough, but thestomach pains afterwards wasn’t good. It has a lot of cheese, beans, and tortillas that is harsh on a fibro stomach.

Baked chicken with healthy buffalo cauliflower bites

Rating: 4 out of 5 stars

Comments: For the baked chicken, I kept it simple by seasoning the raw chicken with salt, pepper, paprika, and onion powder. After slicing an onion, I fried the onion in a bit of olive oil for about three or four minutes. I then added the chicken in the pan and finished cooking it all together.

The cauliflower bites weren’t as crispy as I would have liked them, but they were still delicious!

All beef corn dogs, macaroni and cheese, and green beans

Comments: It was one of those days. Having simple to make meals is the best for when you’re experiencing a flare. The corn dogs are by State Fair and the macaroni and cheese is simple to make (refer to image above).

Perfect Paleo Banana Bread

Rating: 5 out of 5 stars

Comments: This recipe is perfect as is! No modifications needed, and my kids LOVE it! The best part is that it doesn’t hurt my stomach or have adverse reactions.

Pineapple Pecan Cheese Ball

Rating: 5 out of 5 stars

Comments: Normally I would stay far away from cheese, but cream cheeseusuallydoesn’t give my stomach issues. This pecan ball was made for a book club meeting, and it was a hit! I’ll definitely make it again with the fibro-friendly modification listed below.

Make it fibro-friendly: Do not use green bell peppers. It does make it taste yummy, but green bell peppers are a nightshade vegetable and will irritate the digestive tract.

Pina Colada Fluff

Rating: 4 out of 5 stars

Comments: Yummy! I love pineapple and coconut combined! I would use drastically less than what the recipe calls, but that is the only change I would make.

Make it fibro-friendly: All this sugar isn’t good for the fibro body, so maybe using sugar free pudding, pineapple in 100% juice, lite cool whip, and reduce the amount of marshmallows.
